As others have suggested, the trial version is a great place to start.

If you have a Microsoft Rep, I’d recommend reaching out to them to see if they can provide you with a trial F&O VM that you can launch in your own Azure environment.

Last time I looked at the trial version, it had 97% of the functionality disabled, and as such had little to no use in learning the product.

I think if you sign up with Talent Portal 365 you can get access to partner source, LCS, and through there you can deploy a cloud version of D365.
