We are currently testing GP 2016 R2. I added the Project Time and Expense pane to user’s Home screen In GP but users see everyone’s timesheet listed in the recent documents on that pane. Although they are not able to drill down to see the actual timesheet, I would like to prevent users from seeing what others have submitted as far as hours.
I couldn’t find anything to prevent the recent documents from showing up and would like this pane to be visible to users since it provides a quick way to enter and approve timesheets.

This is likely a security role issue. Do you have your employees set up as powerusers?
