I have a user who has a record showing in their list of “work items assigned to me” that has been deleted. 

when the user clicks on it the below error comes up.

Any recommendations on how I might be able to get rid of that out of the users list would be great.

We had a similar issue as a result of an MS bug some time ago, and the solution was to write a script to remove the problem records and submit a ticket to Microsoft to have them run the script in our production environment (if you have an on prem installation, then you could just do the work directly).  Here is the script that worked for us, which was related to expense reports: 

update dbo.WORKFLOWWORKITEMTABLE set STATUS = 2
where REFRECID in
(select REFRECID from dbo.WORKFLOWWORKITEMTABLE t1
join dbo.WORKFLOWTRACKINGSTATUSTABLE t2 on t2.CONTEXTRECID = t1.REFRECID
where t2.DOCUMENTTYPE = ‘Expense reports’
and (t1.REFRECID not in (select RECID from TRVEXPTABLE)
and t1.REFRECID not in (select RECID from TRVEXPTRANS)))

Since yours is a slightly different issue, you would need to change the criteria in the subquery, but this should give you an idea of the tables, values, and joins involved.  From there, you can find the problem records in a test environment and fine-tune your script to get rid of them.
