We currently run BC 13 on prem and are moving to BC 20 in the cloud. I’ve tried to change my sources in PBI to the cloud instance of BC 20 but the change source button in Power Query is grayed out. Has anyone migrated from on prem and how did it impact your published PBI reports?

This depends in how your PowerBI was built. Was it built via SQL connect? Was it connected via OData or Query object? That can change the structure a bit, including custom fields/tables, etc.
