?I thought that to use an item template, I did the following steps:
click the button for new item
create my item by getting the next number or entering and item number
apply my template, choosing from my list of templates.
However, I’m getting prompted with list of templates as soon as I click the button for new item. Then I get an error and then I can follow the above process.
Is there a setting that I’m missing or do we think there’s a customization that’s causing a problem?

in the newer versions, if you have an item template defined and it is Enabled in the Set Up Customer/Vendor/Item Templates page, a list of enabled templates will open when you click to create a new item.
I am not certain why you would be getting an error.?

I found that our Item No. Series did not have a starting number. This was causing the problem.
